Galangal is derived from the rhizome of ginger family plant, Alpinia galanga. It is also known as greater galangal. Java is the central production region in Indonesia.
The harvested rhizome must be washed very good with clean water prior to cutting and drying. The flavour is slightly different than ginger. It has a sharp flavour and pine like aroma.
